"Sometimes all your emotions are best released by simply making a pie"
I have been baking a lot in the past two months. I have always found it
easier to cook because I felt like I could be more creative and if I made
a mistake, it was easier to fix or at least "cover up"...not so with baking.
Baking is more of a science where I have to follow each step and if I try to
take a "short cut" the result will be...well, a flop (literally and figuratively).
But I love baking. I love each step and as David Mamet said,
"We must have pie. Stress cannot exist in the presence of a pie."

"I'll always be with you"

Tonight I was thinking about my family...
thinking about my friends...
and thinking about a family who
is going through a loss I cannot imagine.
"If you live to be a hundred, I want to be hundred
minus one day, so I never have to live
without you."
-A.A. Milne, Winne-the-Pooh
"If ever there is tomorrow when we're not together..
there is something you must always remember.
You are braver than you believe, stronger than you
seem, and smarter than you think, but the most
important thing is, even if we're apart..
I'll always be with you."
-A.A. Milne, Winnie the Pooh
" 'We'll be friends forever, won't we Pooh?' asked Piglet,
'Even longer,' Pooh answered."

Today is National Potato Chip Day! Before this year,
I would not have taken notice of this special day:) but since
last June I have been working for a privately owned potato chip company.
A whole new world of the spud has opened up to me!
I have  had so much fun tasting, tasting, and creating
new photo ideas of our favorite snack.
The Story Behind the Potato Chip.
An Irish chef named George Crum invented the potato chips in
Saratoga Springs in 1853. One day, an overly picky customer
kept sending his fried potatoes back to the kitchen, complaining
that they were too thick and soggy. Mr. Crum responded by slicing
the potatoes so thin that they wouldn't be able to be eaten with a fork.
The customer was so pleased with Crum's crispy creation that they
then became a regular item on the restaurant's menu!
*Thank you Dieffenbach's and One Potato Two Potato for giving
us such a delicious snack! :)

A Brown Eyed Girl's Birthday

"God gave us the gift of life; it is up to us to
give ourselves the gift of living well."
Today, October 2nd is a very special day;
it's my older sister's birthday.
She shares in my love of kimchi,
she is funny (boy, can she make me laugh!)
she is sassy, smart,
EXTREMELY talented,
and honestly, the best sister/friend
I could ever ask for.
Happy birthday, Susan!
I hope today is filled with
laughter, gifts, wine, dessert
and celebration.
“A diplomat is a man who always remembers a woman's
birthday but never remembers her age.”
Robert Frost
I love you.

I love almost everything pertaining to cooking...
that includes looking at pots and pans, and cooking
utensils. Recently, I have fallen for a very un-glamourous
cooking essential...a cast iron skillet. It won't break if I drop
it, there is no non-stick coating that will eventually peel off
and it can be used as a weapon if needed.
Last night I decided to experiment and see if I could cook
our whole dinner just using a cast iron skillet.

Homemade Potato Chips
 Peanut oil, for frying
3 potatoes, thinly sliced
Sea Salt
In a large cast iron skillet, fill oil no more than halfway and heat the oil to 350 degrees F.
Add the potato slices in batches. Fry until light golden brown, about 2 to 3 minutes.
Drain on paper towels,
season with salt, and serve
Sauteed Mushrooms and Onions
Reserve 2 tablespoons of oil from the chips and
place mushrooms and onions into the
skillet. Sautee until golden brown.
1 lb of ground beef
Salt and Pepper
1 glove minced garlic

A Walk in the Park with Emma

This morning my niece, Emma,
and I went for a walk in the
park...and for a mini
photo shoot.

"Im thinking...why do I not have any teeth?"
"Aunt Libby, do you think I look good
with no teeth?"
"Oh! Are you taking a picture of me?!"
"Hey, let me try"

I love you baby girl.
